Shrimp quesadillas fast & fabulous - Boston Herald

Quesadillas are quick, easy to prepare, and can be made with a number of different proteins. At Legal Sea Foods, our favorite happens to be shrimp — these crustaceans are universally popular and adaptable to a wide variety of preparations.

In fact, we’ll be offering a special shrimp menu, running through Feb. 12. The menu features nine shrimp appetizers and entrees, including the quesadilla. Bon appetit!

SHRIMP QUESADILLAS

1 lb. uncooked medium shrimp, peeled and deveined

1 T. olive oil

½ c. onion chopped

½ c. bell pepper chopped

2 cloves garlic minced

2 T. chili powder

6 t. vegetable oil

2 c. Monterey jack cheese

6 medium flour tortillas

Heat a tablespoon of olive oil in a large skillet or pan. Add the chopped onion, bell pepper and garlic to the pan. Cook for 1 minute, or until tender.

Add the shrimp and chili powder and cook for another 1-2 minutes, or until shrimp begins to turn pink.

Transfer the mixture to a bowl and rinse and wipe down the pan with a paper towel. Return the pan to the heat and brush with a teaspoon of vegetable oil.

Place a tortilla in the pan and sprinkle cheese on one side of the tortilla. Spoon a sixth of the shrimp mixture and then another sprinkle of cheese. Fold the tortilla in half. Cook for 2-3 minutes on each side or until golden and crispy. Repeat for remaining tortillas. Cut into ¼ wedges before plating. Makes 6 servings.

Optional garnishes include sour cream, salsa, corn relish and/or guacamole with a drizzle of chipotle aioli.
